A wonderful cheesy polenta.


1 jar red pasta sauce of your choice
1 cup grated low-fat mozzarella cheese
1 cup grated jack cheese
4 cups cooked polenta meal (pre-cooked or prepared according to directions on package)
Parmesan cheese to sprinkle


Spray a large casserole dish with vegetable spray. Pour in 1/4 jar sauce. Layer half of the polenta meal over sauce and top with half of the cheese. Pour 1/2 of the remaining sauce over the top of this layer. Layer on the remaining polenta meal. Top with remaining cheese. Spread remaining sauce over the top and sprinkle with parmesan cheeses. Bake at 350 degrees F for 45 minutes.

Variation: cook 1 pound of ground hamburger and add to sauce prior to preparing dish.
