If you like artichokes you will love this. Serve with your favorite pasta. Can make ahead and freeze.

Ingredients:

3/4 cup (6 ounce jar) marinated Artichoke hearts, drained and marinade reserved
1 cup slivered Onion
1 large clove Garlic, minced
1 3/4 cup (14 1/2-ounce can) whole peeled Tomatoes, undrained
2/3 cup (6 ounces) Tomato paste
1 cup Water
2 tablespoons chopped fresh Basil
1/2 teaspoon Salt

Preparation:

In 2 1/2 quart saucepan, heat reserved artichoke marinade. Cook and stir onion and garlic in marinade for 2 to 3 minutes or until tender. Chop artichoke hearts; add to onion mixture with tomatoes and juice, tomato paste, water , basil and salt. Break up tomatoes. Bring to a boil; reduce heat to low. Simmer uncovered, 15 to 20 minutes. Makes 4 cups sauce.

SAVORY CAPER AND OLIVE SAUCE:
Eliminate marinated artichoke hearts and basil. In 2 1/2-qt saucepan, heat 2 Tbsp olive oil. Cook and stir onion and garlic for 2 to 3 minutes or until tender. Add 3/4 cup sliced and quartered zucchini, tomatoes and juice, tomato paste, water, salt 1/2 cup(2 1/4oz can) drained, slices ripe olives and 2 Tbsp capers. Proceed as directed above.
